Light Pecan Pie

Ingredients

  • 1 c. sugar
  • 1 tsp. vanilla
  • 23 Ritz crackers
  • 3/4 c. chopped pecans
  • 1 tsp. baking powder
  • 4 egg whites

Instructions

  1. Beat 4 eggs whites with a little salt.
  2. Fold in 1 cup sugar and 1 teaspoon vanilla.
  3. In separate bowl, crush 23 Ritz crackers. Mix in 3/4 cup chopped pecans and 1 teaspoon baking powder.
  4. Stir and fold into egg whites.
  5. Place in greased pie pan.
  6. Bake for 30 to 35 minutes at 350°.
