Ingredients

  • 3 ripe bananas
  • 1 Tbsp lemon juice
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg
  • 2 Tbsp buttermilk
  • 1/2 tsp ground cloves
  • 1 egg
  • 2 egg whites
  • 3/4 cup sugar
  • 1/2 cup vegetable oil

Instructions

  1. Spray a 9 x 15-inch pan with vegetable cooking spray.
  2. Line the bottom of the pan with waxed paper.
  3. Preheat the oven to 350°F (175°C).
  4. In a bowl, mash the ripe bananas.
  5. Add lemon juice, eggs, egg whites, and buttermilk; mix well.
  6. In another bowl, whisk together sugar, baking powder, baking soda, salt, nutmeg, and ground cloves.
  7. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  8. Fold in vegetable oil until batter is smooth.
  9. Pour batter into the prepared pan.
  10. Bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow to cool before removing from the pan and slicing.
