Ingredients

  • 1 pie crust
  • 1 (8 oz.) package cream cheese, softened
  • 1 (3 oz.) package cream cheese, softened
  • 1 pint whipped cream
  • 2 teaspoons vanilla
  • 2 cups confectioners' sugar

Instructions

  1. Line a 9 x 13-inch pan with the pie crust and bake according to crust package instructions.
  2. In a mixing bowl, whip the softened cream cheeses with vanilla until smooth.
  3. Add confectioners' sugar to the cream cheese mixture and blend well.
  4. Fold in the whipped cream until fully incorporated.
  5. Pour the cream cheese mixture into the baked pie crust, spreading evenly.
  6. Top the filling with pineapple pie filling.
  7. Refrigerate the dessert overnight before serving.
  8. Optionally, serve with a splash of creme de menthe for added flavor.
