Ingredients

  • 1 lb. dry lima beans
  • 1/2 lb. salt pork (fatback)
  • 1 cup granulated sugar
  • 1 teaspoon ground ginger
  • 1 large onion

Instructions

  1. Wash the lima beans and drain.
  2. Put the beans in a pot, cover with water, and add ground ginger.
  3. Cook slowly until the beans are soft when pierced with a fork, adding more water if necessary.
  4. Dice the salt pork into small squares and sauté until lightly browned.
  5. Add the diced onion and cook until soft.
  6. Add a small amount of bean water and the sugar, then bring to a boil.
  7. Combine all ingredients into a casserole dish and stir to distribute the salt pork and onion.
  8. Bake in a 350°F oven for about 1 1/2 hours or until lightly browned on top.
