Lima Bean Cake

Ingredients

  • 16 oz. lima beans
  • 6 c. sugar
  • 3 sticks butter or margarine
  • 1/2 Tbsp. salt
  • 3 Tbsp. baking soda
  • 3 Tbsp. vanilla extract
  • 3 eggs
  • 1 (14 oz.) can Eagle Brand condensed milk
  • 8 c. flour

Instructions

  1. Soak the lima beans overnight in water.
  2. Peel the next day. Put peeled lima beans in a pot with water and boil until tender. Drain.
  3. Put in 2 cups sugar and mix well.
  4. Put into refrigerator until cold.
