Ingredients

  • 1 1/2 sticks margarine
  • 1/3 cup confectioners sugar
  • 1 tablespoon vanilla
  • 2 tablespoons lime juice
  • zest of 2 limes
  • 1 3/4 cups plain flour
  • 2 tablespoons cornstarch

Instructions

  1. Cream margarine and confectioners sugar together until smooth.
  2. Add vanilla, lime juice, and lime zest; mix well.
  3. In a separate bowl, combine flour, cornstarch, and salt.
  4. Gradually add the dry ingredients to the butter mixture and mix until combined.
  5. Roll the dough onto wax paper to form a log or sheet, then refrigerate until firm.
  6. Slice the chilled dough into thin cookies.
  7. Bake the slices at 350°F (175°C) for 12 to 15 minutes until lightly golden.
  8. Remove from oven and coat with confectioners sugar while still warm, if desired.
