Ingredients

  • 1 lb. dried navy beans
  • 12 c. water
  • salt meat or ham bone
  • 2 1/2 c. mashed, cooked potatoes
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 2 to 3 carrots, chopped

Instructions

  1. Heat the beans and water to boiling, then reduce the heat.
  2. Boil uncovered for 2 minutes, then remove from heat.
  3. Cover and let stand for 1 hour, or soak the beans with water overnight.
  4. Drain the beans and add 10 cups of fresh water.
  5. Add the salt meat or ham bone to the beans and water.
  6. Bring to a boil, then reduce the heat.
  7. Cover and simmer for about 2 hours or until the beans are tender.
  8. Stir in the mashed, cooked potatoes, salt, pepper, chopped onion, chopped celery, and chopped carrots.
  9. Cover and simmer for an additional hour.
