Ingredients

  • 2 1/2 cups flour, divided
  • 1/2 cup powdered sugar
  • 3/4 cup cold butter or margarine
  • 4 eggs
  • 2 cups sugar
  • 1/3 cup lime juice
  • 1/2 teaspoon lime peel
  • 1/2 teaspoon baking powder
  • additional powdered sugar

Instructions

  1. In a bowl, combine 2 cups of flour and powdered sugar.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Pat the mixture into a greased 9 x 13 inch pan.
  4. Bake at 350°F for 20 minutes or until lightly browned.
  5. In a separate bowl, beat the eggs.
  6. Add sugar, lime juice, lime peel, and baking powder to the eggs and mix well.
  7. Pour the lime mixture over the baked crust.
  8. Bake at 350°F for an additional 20 minutes or until set.
  9. Allow to cool, then dust with additional powdered sugar before serving.
