Ingredients

  • 2 cloves garlic
  • 2 c. fresh basil, cleaned and stems removed
  • 3 Tbsp. pine nuts
  • 1/2 tsp. salt
  • 1/2 c. olive oil
  • 1 Tbsp. chopped Italian parsley
  • 1 lb. thin linguini
  • 4 Tbsp. Pecorino Romano cheese

Instructions

  1. Cook the linguini in boiling salted water until al dente, then drain.
  2. In a blender or food processor, combine garlic, basil, pine nuts, salt, and chopped Italian parsley.
  3. Slowly add olive oil while blending until smooth and well combined.
  4. Toss the cooked linguini with the pesto until evenly coated.
  5. Serve topped with grated Pecorino Romano cheese.
