Lisa'S Vegetable Chowder

Ingredients

  • 1 carrot, diced
  • 3 stalks celery, diced
  • 2 small sweet potatoes, diced
  • 16 oz. frozen corn
  • 2 Tbsp. butter
  • 2 tsp. thyme
  • 2 bay leaves
  • 6 c. (3 cans) low sodium chicken broth

Instructions

  1. Saute vegetables in butter with thyme and bay leaves until tender (approximately 10 minutes).
  2. Add chicken broth; simmer 45 minutes.
  3. Remove bay leaves.
  4. Remove 2 1/2 cups and puree in blender.
  5. Hold hand firmly on top of blender when blender is turned on or let the 2 1/2 cups of the mixture cool down!
  6. Enjoy.
