Lisa'S Zucchini Bread

Ingredients

  • 3 eggs
  • 2 c. sugar
  • 2 c. zucchini, grated
  • 1 c. oil
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 c. chopped nuts (optional)

Instructions

  1. Grease bottom of 2 loaf pans.
  2. Beat eggs until foamy.
  3. Stir in sugar, zucchini, oil and vanilla.
  4. Lightly spoon flour into measuring cup.
  5. Stir in flour and remaining ingredients.
  6. Blend well.
  7. Bake at 350° for 50 to 60 minutes.
  8. Makes 2 loaves.
