Ingredients

  • 1 large box or 2 small boxes sugar-free lime Jell-O
  • 1 cup chopped pecans
  • 1 cup boiling water
  • 1 (8 oz.) package cream cheese
  • 1 (8 oz.) can crushed pineapple

Instructions

  1. Dissolve the sugar-free lime Jell-O in boiling water.
  2. Drain the pineapple into a cup and add enough water to make 1/2 cup liquid; add this to the Jell-O.
  3. While the Jell-O is hot, mash the cream cheese into it.
  4. Add the crushed pineapple and chopped pecans to the mixture.
  5. Refrigerate until the salad is firm.
