Ingredients

  • 1/2 cup skim milk
  • 2 eggs
  • 1 1/2 Tbsp. sugar
  • 1/2 tsp. vanilla
  • 1 tsp. cornstarch
  • 1/2 cup cooked rice
  • 1/2 tsp. cinnamon
  • 2 Tbsp. raisins

Instructions

  1. Combine milk, eggs, sugar, and cornstarch in a saucepan.
  2. Cook over medium heat, stirring constantly, until beginning to thicken.
  3. Add cooked rice, vanilla, cinnamon, and raisins (if using).
  4. Stir well to combine.
  5. Pour into a serving bowl.
  6. Cover and refrigerate until chilled.
