Ingredients

  • 2 pkg dry yeast
  • 1/2 cup warm water
  • 3 cups warm milk
  • 1/3 cup brown sugar
  • 1/4 cup oil
  • 1 teaspoon baking soda
  • 4 cups whole wheat flour
  • 2 cups gluten flour
  • 1/2 teaspoon salt
  • 3 tablespoons wheat germ

Instructions

  1. Soften yeast in warm water and set aside.
  2. Heat milk and add brown sugar, oil, yeast mixture, and baking soda.
  3. Pour all at once over the dry ingredients (whole wheat flour, gluten flour, salt, and wheat germ). Stir until well mixed.
  4. If the dough is too soft, add a little more wheat flour. Pour onto a board with whole wheat flour and knead until elastic.
  5. Set into an oiled bowl and turn the dough over in the bowl so the top is oiled.
  6. Cover and let rise until doubled in size.
  7. When doubled, shape into loaves and place into well-greased pans.
  8. Let rise until doubled, then bake in a 350°F oven for approximately 30 minutes.
