Soft, fluffy little pancakes perfect for a quick breakfast or snack, served rolled with jelly and dusted with confectioners sugar for a sweet treat.

Ingredients

  • 1 1/2 cups milk
  • 1 egg
  • 3 1/2 teaspoons sugar
  • 1 1/2 tablespoons baking powder
  • flour (enough to make a dough not too thick)

Instructions

  1. Beat all ingredients with a mixer until well combined.
  2. Put shortening on a hot griddle or frying pan.
  3. Pour batter onto the griddle to form small pancakes.
  4. Cook until bubbles form on the surface and edges look set, then flip and cook until golden.
  5. Serve rolled with jelly and dusted with confectioners sugar.
