Little Wellingtons are elegant, savory pastries featuring tender filet mignon topped with mushroom and onion mixture, wrapped in pastry, perfect for sophisticated appetizers or special occasions.

Ingredients

  • 1 lb. filet mignon, cut into 6 slices
  • butter or oil for browning
  • 1 large onion, chopped
  • mushrooms, sliced
  • 1/2 cup sherry or white wine
  • 1 box Pepperidge Farm patty shells

Instructions

  1. Saute filet slices in butter or oil until lightly browned, then cool.
  2. Saute chopped onion and sliced mushrooms in the meat drippings.
  3. Add sherry to the mushroom mixture and reduce slightly.
  4. Roll out the pastry shells until large enough to cover the meat.
  5. Place a filet slice in the center of each pastry shell.
  6. Top the filet with tablespoons of mushroom mixture.
  7. Cover the meat with the pastry, sealing the edges with water.
  8. Bake at 350°F (175°C) for about 25 minutes until golden.
