Seafoam candy is a light, airy treat with a crunchy texture and sweet vanilla flavor, perfect for festive occasions or as a nostalgic homemade gift.

- Butter the sides of a heavy 1 1/2-quart saucepan.
- Combine light brown sugar, granulated sugar, hot water, light corn syrup, and salt in the saucepan.
- Cook, stirring constantly, until the sugar dissolves and the mixture comes to a boil.
- Then cook to the hard ball stage (250°F) without stirring.
- Remove from heat. Immediately beat egg whites until stiff.
- Pour hot syrup in a thin stream over beaten egg whites, beating constantly at high speed on an electric mixer.
- Add vanilla.
- Continue beating until mixture forms soft peaks and begins to lose its gloss, about 10 minutes.
- Stir in chopped pecans if using.
- Drop by teaspoon onto waxed paper, swirling each candy to a peak.
