Ingredients

  • 1 1/2 c. light brown sugar
  • 1/2 c. granulated sugar
  • 1/2 c. hot water
  • 1/4 c. light corn syrup
  • 1/4 tsp. salt
  • 2 egg whites
  • 1 tsp. vanilla
  • 1/2 c. chopped pecans

Instructions

  1. Butter the sides of a heavy 1 1/2-quart saucepan.
  2. Combine light brown sugar, granulated sugar, hot water, light corn syrup, and salt in the saucepan.
  3. Cook, stirring constantly, until the sugar dissolves and the mixture comes to a boil.
  4. Then cook to the hard ball stage (250°F) without stirring.
  5. Remove from heat. Immediately beat egg whites until stiff.
  6. Pour hot syrup in a thin stream over beaten egg whites, beating constantly at high speed on an electric mixer.
  7. Add vanilla.
  8. Continue beating until mixture forms soft peaks and begins to lose its gloss, about 10 minutes.
  9. Stir in chopped pecans if using.
  10. Drop by teaspoon onto waxed paper, swirling each candy to a peak.
