Ingredients

  • 2 egg yolks
  • 2 tsp Sucaryl
  • 2 Tbsp cornstarch
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup evaporated milk
  • 8 large peeled apples
  • 2 egg whites
  • 4 Tbsp powdered milk
  • 1/2 tsp lemon extract
  • 1/4 tsp vanilla extract

Instructions

  1. Place egg yolks, Sucaryl, cinnamon, nutmeg, and evaporated milk in a blender and blend for 2 seconds.
  2. Add peeled apples to the blender.
  3. Blend until the mixture is fine.
  4. Pour the apple mixture into a buttered pie plate.
  5. Bake at 450°F for 25 minutes.
  6. While the pie is baking, beat egg whites until stiff peaks form.
  7. Add powdered milk, vanilla extract, lemon extract, and 1 teaspoon Sucaryl to the egg whites and process until combined.
  8. Spread the meringue over the baked pie, reaching the edges.
  9. Bake at 350°F until the meringue is golden brown, about 10 minutes.
