Ingredients

  • 6 Tbsp. butter, softened
  • 1 cup packed brown sugar
  • 1 egg
  • 1/2 tsp. vanilla
  • 1 large banana, mashed
  • 1 3/4 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (6 oz.) pkg. butterscotch flavored chips

Instructions

  1. In a large bowl of an electric mixer, beat butter and brown sugar until creamy.
  2. Beat in egg, vanilla, and mashed banana.
  3. In a separate bowl, stir together flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the butter mixture, blending thoroughly.
  5. Stir in butterscotch chips.
  6. Spread batter evenly in a greased 9-inch square baking pan.
  7. Bake in a 350°F oven for 35 to 40 minutes or until golden brown.
  8. Let cool in the pan on a rack, then cut into 16 squares.
  9. Store in refrigerator.
