Ingredients

  • 1 lb. lo-cal, smooth cottage cheese
  • 1 cup pineapple tidbits or crushed pineapple
  • 1 envelope gelatin
  • 1 egg
  • 5 packets sugar substitute
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • cinnamon
  • 1 graham cracker pie crust

Instructions

  1. Place the cottage cheese, pineapple, gelatin, egg, sugar substitute, vanilla, and lemon juice into a blender.
  2. Blend until smooth.
  3. Pour the mixture into the graham cracker pie crust.
  4. Sprinkle with cinnamon on top.
  5. Bake at 350°F for 30 to 40 minutes until set and lightly browned.
