Ingredients

  • red and ripe firm tomatoes
  • salt
  • pepper
  • olive and pimento or chive cream cheese
  • soft tub butter spread
  • plain flour
  • 1 egg, beaten

Instructions

  1. Wash and slice tomatoes into medium thickness slices.
  2. Spread one tomato slice with olive and pimento or chive cream cheese.
  3. Top with a second tomato slice.
  4. Dip the assembled tomato slices into beaten egg, then into flour mixed with salt and pepper.
  5. Heat oil to medium temperature.
  6. Fry the tomato slices on both sides until golden brown.
