A hearty roast beef dinner featuring tender rump roast cooked with potatoes and carrots, topped with a creamy mushroom sauce—perfect for family gatherings or Sunday dinners.

Ingredients

  • 4 to 6 lb beef rump roast
  • 6 potatoes, peeled
  • 6 carrots, peeled and cut in half
  • 1 can cream of mushroom soup
  • 1 tsp salt
  • 3 Tbsp cornstarch
  • 1 Tbsp sugar

Instructions

  1. Place the beef rump roast in a roasting pan and bake at 375°F for 1 hour.
  2. Arrange peeled potatoes and halved carrots around the roast in the pan.
  3. Combine the cream of mushroom soup, salt, cornstarch, sugar, and one can of water in a blender and process until smooth.
  4. Pour the blended sauce over the roast and vegetables.
  5. Cover the pan and bake at 275°F for 3 hours or until the roast is tender.
  6. Optionally, slice an onion and place over the roast before baking.
