Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • oil for frying
  • 1/2 cup uncooked rice
  • 1 teaspoon salt
  • pepper to taste
  • 1 small head cabbage, shredded
  • 2 cups tomatoes with juice or tomato soup
  • 2 cups water
  • 1 beef-flavored bouillon cube

Instructions

  1. Coarsely shred the cabbage to measure 5 or 6 cups.
  2. Spread half of the shredded cabbage in a large buttered casserole or roasting pan.
  3. Heat oil in a frypan and add ground beef, chopped onion, uncooked rice, salt, and pepper.
  4. Cook over medium heat, stirring constantly, for about 10 minutes until the beef is cooked through but not browned.
  5. Spoon the meat mixture over the layer of cabbage in the casserole.
  6. Top with the remaining shredded cabbage.
  7. Heat the tomatoes with water and the bouillon cube until boiling.
  8. Pour the tomato mixture over all the ingredients in the casserole.
  9. Cover and bake at 350°F (175°C) for 1 hour or until the cabbage is tender.
