Ingredients

  • 1 egg
  • 1/2 cup mashed ripe banana
  • 1/3 cup butter or margarine melted
  • 1/4 cup no-sugar-added pineapple fruit spread
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 1/3 cup unsweetened flaked coconut
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup macadamia nuts chopped coarsely

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Combine beaten egg, mashed banana, melted butter, pineapple fruit spread, and vanilla in a medium bowl.
  3. Add all-purpose flour, flaked coconut, baking powder, and salt; mix well.
  4. Stir in coarsely chopped macadamia nuts.
  5. Drop a tablespoon of dough onto lightly greased cookie sheets, spacing them 2 inches apart.
  6. Bake for 10 to 12 minutes or until lightly browned.
  7. Cool on wire racks and store in a tightly covered container.
