- Combine beaten egg, mashed banana, melted butter, pineapple fruit spread, and vanilla in a medium bowl.
- Add all-purpose flour, flaked coconut, baking powder, and salt; mix well.
- Stir in coarsely chopped macadamia nuts.
- Drop a tablespoon of dough onto lightly greased cookie sheets, spacing them 2 inches apart.
- Bake for 10 to 12 minutes or until lightly browned.
