Delightful almond macaroons with a tender, chewy texture and sweet almond flavor, perfect for almond lovers or as a light, elegant treat for gatherings.

Ingredients

  • 8 oz. Solo almond paste
  • 2 egg whites
  • 1 1/4 cups sugar

Instructions

  1. Cut almond paste into very small pieces in a mixing bowl.
  2. Add sugar and egg whites to the bowl.
  3. Blend until very smooth.
  4. Pipe cookies or by the teaspoon, about the size of half a dollar, onto a brown paper lined baking sheet.
  5. Bake at 325°F for about 20 minutes.
  6. Allow to cool.
  7. Dampen the back of the brown paper and remove cookies.
