Ingredients

  • 12 ears fresh corn
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. butter or margarine
  • 2 large tomatoes, peeled and chopped
  • 1 medium green pepper, chopped
  • 1 clove garlic, minced
  • 1 Tbsp. sugar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. hot sauce

Instructions

  1. Cut off tips of corn kernels into a bowl.
  2. Scrape milk and remaining pulp from cob with a knife.
  3. Set aside.
  4. Combine oil and butter in a large skillet over medium heat until butter melts.
  5. Add corn, tomatoes, green pepper, garlic, sugar, salt, pepper, and hot sauce to the skillet.
  6. Cook, stirring constantly, for 5 minutes.
  7. Reduce heat; cover and cook for 20 minutes, stirring occasionally.
