  2. Cut in the lard until the mixture resembles coarse crumbs.
  3. Add the beaten egg yolk mixed with enough milk to make 2/3 cup and mix just until the dough holds together.
  4. Divide the dough in half and roll one portion into an 11 x 15-inch rectangle.
  5. Transfer this pastry to a cookie sheet.
  6. Spread crushed cornflakes evenly over the pastry.
  7. Layer sliced peeled apples over the crushed cornflakes.
  8. Mix sugar with cinnamon and sprinkle over the apples.
  9. Cover with the remaining half of the dough, rolled out to the same size, and pinch the edges together to seal.
  10. Beat the egg white until stiff and spread over the top of the pastry.
  11. Bake at 375°F (190°C) for 40 minutes.
