Ingredients

  • 2 c. tomato puree
  • 6 c. beef broth
  • 2 Tbsp. onion
  • 1/2 tsp. basil
  • 1/4 c. dry sherry

Instructions

  1. Combine all ingredients and simmer for 20 minutes.
  2. Strain through cheesecloth or a dish towel.
  3. Strain out the tomato puree.
  4. You will have about 6 cups of soup.
  5. You may wish to add a topping of sour cream or yogurt.
