Ingredients

  • 1 1/4 lb beef tenderloin (middle cut)
  • 1 1/2 tsp salt
  • 1/4 cup water
  • 6 Tbsp butter or margarine
  • 3 Tbsp finely chopped parsley
  • 2 Tbsp butter or margarine
  • dash ground pepper
  • 10 potatoes

Instructions

  1. Trim excess fat and remove tendon from beef tenderloin.
  2. In a skillet, heat butter until lightly browned.
  3. Add beef and brown well on all sides. Sprinkle with half the salt and pepper.
  4. Reduce heat, cover, and cook for about 10 minutes, turning once. Remove beef and keep warm, covering with foil.
  5. Add water to the skillet, heat, scrape up brownings, and strain juices.
  6. Peel potatoes and slice thinly.
  7. Layer potatoes in a lightly greased ovenproof dish, sprinkling remaining salt between layers.
  8. Pour pan juices over the potatoes.
  9. Bake at 425°F for about 30 minutes.
  10. Cut beef into 8 even slices.
  11. Place slices on top of the baked potatoes.
  12. Mix softened butter with minced garlic and chopped parsley.
  13. Spread parsley butter over the beef slices.
  14. Bake at 425°F for about 8 minutes.
  15. Serve hot.
