Ingredients

  • 1 box of Boca Meat Crumbles or 2/3 pound of ground beef
  • 2- (smaller ones, think its the 14 oz) cans of diced tomatoes with chilis (mexican style)- DO NOT DRAIN
  • 1 4-oz can of green chilies (mild) drained
  • 1 1/2 cups of elbow macaroni, uncooked
  • 2 1/2 cups of tomato juice (i buy the campbells brand in the cans. Buy two pop size cans and use the whole thing. no need to measure)
  • 2 (smaller cans, once again thinking 14 oz) cans of beans- I use Northern Whites, but you can use pinto or kidney
  • 2 tsp of chili powder
  • 1 medium onion
  • Can add green peppers as well

Instructions

  1. Saute Onion until translucent. Add "meat" cook for 1 minute.
  2. Add Salt and Pepper to taste.
  3. Add chili peper.
  4. Add Tomatoe Juice, Green Chilis, tomatoes to onion/meat mixture. Bring to a boil.
  5. Add beans and elbow mac, reduce heat to a simmer. Cover and cook for 15 minutes- until mac is cooked. Make sure you cover!!!
  6. Serve with shredded cheese or some avacado etc.... Enjoy!
