Magic Bran Muffins
Ingredients
- 1 1/2 cups all-bran cereal ⓘ
- 1 cup skim milk ⓘ
- 1 cup whole wheat flour ⓘ
- 1/2 teaspoon salt ⓘ
- 1 teaspoon ground cinnamon ⓘ
- 1 teaspoon ground nutmeg ⓘ
- 1 teaspoon baking powder ⓘ
- 1 teaspoon baking soda
- 3/4 cup rolled oats ⓘ
- 1 teaspoon vanilla ⓘ
- 3 ripe bananas (I freeze mine and then thaw, toss the juice in too) ⓘ
- 2 small apples, grated ⓘ
- 1 egg ⓘ
- 1/3 cup oil ⓘ
Instructions
- Pour milk over cereal and let sit for at least 10 minutes.
- Sift flour, spices, salt , baking powder and baking soda together. Add dry oatmeal.
- In a separate bowl, thoroughly blend egg, oil, vanilla, bananas and grated apples.
- Add cereal and milk mixture to dry ingredients, then add wet ingredients Stir until combined.
- Line muffin pan with paper liners. Fill liners 2/3 full. Bake 20 minutes at 375*.
