A fluffy, sweet white frosting perfect for cakes and cupcakes, with a light vanilla flavor. Suitable for decorating special occasions or everyday treats.

Ingredients

  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/4 tsp. cream of tartar
  • 5 Tbsp. cold water
  • 2 egg whites
  • 1 tsp. vanilla

Instructions

  1. Mix sugar, salt, cream of tartar, and water in a saucepan. Stir well.
  2. Bring the mixture to a full boil.
  3. Place two egg whites in a small mixer bowl.
  4. Do not beat the egg whites until the syrup is cooked.
  5. Pour the hot syrup slowly over the egg whites while beating at high speed until all syrup has been added.
  6. Reduce speed to medium and add vanilla; beat until the mixture reaches spreading consistency.
  7. Use to ice a cake, and optionally sprinkle with coconut.
