  9. Add 2 1/2 cups water and a pinch of salt to the pan with green peppers and bring to a boil.
  10. Add the rice and cover the pan, cooking on very low heat for 30 minutes until rice is done.
  11. Stir in the mixed vegetables into the cooked rice and gently mix.
  12. Cover and cook for an additional 15 minutes to allow flavors to meld.
