Ingredients

  • 1 large beef roast (frozen)
  • 4 to 5 potatoes, cut in 1/4-inch chunks
  • 1 to 2 lb. carrots, cut in half
  • 1 large onion, sliced
  • salt and pepper to taste

Instructions

  1. Place the frozen beef roast on the bottom of a roasting pan or extra large pot.
  2. Add potatoes, carrots, and sliced onion around and on top of the roast.
  3. Season with salt and pepper to taste.
  4. Cover with a lid or heavy-duty foil and cook in the oven at 500°F for about 20 minutes.
  5. Reduce the oven temperature to 250°F and cook all night.
  6. If the oven cooks quickly, reduce the temperature further to 200°F.
