Ingredients

  • 2 c. blanched and roasted hazelnuts
  • grated rind of 1 lemon
  • 1/2 c. sugar
  • 2 eggs, separated
  • 1 whole egg
  • 1/2 c. all-purpose flour
  • 2 c. confectioners sugar

Instructions

  1. Grind the blanched and roasted hazelnuts and place in a bowl.
  2. Mix in the grated lemon rind and sugar.
  3. Fold in the 2 egg yolks (save whites in a separate bowl) and the whole egg.
  4. Knead until all ingredients are well incorporated.
