Ingredients

  • 11 oz. can mandarin oranges, drained
  • 20 oz. can pineapple chunks, drained
  • 2 cups large-curd cottage cheese
  • 8 oz. Cool Whip
  • 1 tsp. vanilla extract
  • 6 oz. package orange Jell-O
  • 1/4 cup chopped pecans

Instructions

  1. Combine the mandarin oranges, pineapple chunks, cottage cheese, Cool Whip, and vanilla extract in a large mixing bowl.
  2. Sprinkle the orange Jell-O over the mixture and stir well to incorporate.
  3. Spoon the mixture into a 13 x 9-inch dish.
  4. Combine the chopped pecans and coconut.
  5. Sprinkle the pecan and coconut mixture over the salad.
  6. Chill for 6 hours or overnight before serving.
