Ingredients

  • 1/2 cup whole bran cereal
  • 2/3 cup milk
  • 1/3 cup raisins
  • 1/3 cup butter
  • 1/4 cup packed brown sugar
  • 2 tablespoons molasses
  • 1 egg
  • 1 1/2 cups self-rising flour

Instructions

  1. Grease 12 muffin cups.
  2. Combine bran cereal and milk in a large bowl.
  3. Let stand for 5 minutes.
  4. Add raisins, butter, brown sugar, molasses, and egg to the cereal; mix well.
  5. Stir in flour until moistened.
  6. Batter will be lumpy.
  7. Do not overmix.
  8. Fill muffin cups 2/3 to 3/4 full.
  9. Bake at 400°F for 12 to 15 minutes.
