Ingredients
- 1 cup bran cereal ⓘ
- 1 1/4 cups sweetened applesauce ⓘ
- 1/2 cup liquid egg substitute ⓘ
- 1/2 cup light molasses ⓘ
- 1 1/2 cups all-purpose flour ⓘ
- 1 teaspoon baking soda ⓘ
- 1 teaspoon ground cinnamon ⓘ
- 1 cup firmly packed dark brown sugar ⓘ
- 1/2 cup margarine softened ⓘ
- 1/2 cup seedless raisins ⓘ
- confectioners sugar (optional) ⓘ
Instructions
- Mix bran cereal, applesauce, egg substitute, and molasses; let stand for 5 minutes.
- Blend all-purpose flour, baking soda, and ground cinnamon; set aside.
- In a mixer, beat brown sugar and margarine until creamy.
- Beat in the bran mixture until smooth.
- Gradually blend in the flour mixture; stir in raisins.
- Spread batter evenly in an ungreased 15 x 10 x 1-inch baking pan.
- Bake at 350°F (175°C) for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan on a wire rack.
- Sprinkle with confectioners sugar if desired and cut into 48 (2 x 1-inch) bars.
