Ingredients

  • 1 cup bran cereal
  • 1 1/4 cups sweetened applesauce
  • 1/2 cup liquid egg substitute
  • 1/2 cup light molasses
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 cup firmly packed dark brown sugar
  • 1/2 cup margarine softened
  • 1/2 cup seedless raisins
  • confectioners sugar (optional)

Instructions

  1. Mix bran cereal, applesauce, egg substitute, and molasses; let stand for 5 minutes.
  2. Blend all-purpose flour, baking soda, and ground cinnamon; set aside.
  3. In a mixer, beat brown sugar and margarine until creamy.
  4. Beat in the bran mixture until smooth.
  5. Gradually blend in the flour mixture; stir in raisins.
  6. Spread batter evenly in an ungreased 15 x 10 x 1-inch baking pan.
  7. Bake at 350°F (175°C) for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan on a wire rack.
  9. Sprinkle with confectioners sugar if desired and cut into 48 (2 x 1-inch) bars.
