Ingredients

  • 1 egg
  • 1 cup sugar
  • 1 (5 1/2 oz.) can mandarin oranges
  • 1 cup chopped pecans
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/8 tsp. salt

Instructions

  1. Combine egg and sugar in a mixing bowl and beat with an electric mixer.
  2. Add the mandarin oranges and their syrup, mixing well.
  3. Gradually add flour, chopped nuts, baking soda, and salt, mixing until just combined.
  4. Add enough reserved orange syrup to thin the batter to pouring consistency.
  5. Pour batter into a greased and floured 8x8-inch pan.
  6. Bake at 350°F (175°C) until browned on top, about 40 minutes.
