Mango-And-Roasted Corn Salsa
Ingredients
- 1 1/2 cups fresh corn kernels (about 3 ears) ⓘ
- 1 teaspoon vegetable oil ⓘ
- 1 1/2 cups diced peeled mango ⓘ
- 1/4 cup fresh lemon juice ⓘ
- 2 tablespoons diced sweet onion ⓘ
- 2 tablespoons minced fresh mint ⓘ
- 2 tablespoons minced fresh cilantro ⓘ
- 1 1/2 teaspoons grated peeled fresh ginger ⓘ
- 1/4 teaspoon salt ⓘ
Instructions
- Preheat oven to 400°.
- Combine corn and oil, tossing well. Place on a baking sheet, spreading evenly. Bake at 400° for 15 minutes. Cool. Combine corn, mango, and remaining ingredients in a bowl; toss gently.
