Mango Chutney(Relish)

Ingredients

  • 1 1/2 c. sugar
  • 1 1/2 c. white vinegar
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, mashed
  • 1 lime, thinly sliced
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1/2 c. raisins
  • 5 large mangoes, peeled and chopped (6 c.)

Instructions

  1. Combine all ingredients, except mangoes.
  2. Bring to a boil. Reduce heat.
  3. Simmer 1 hour or until thick.
  4. Watch and stir frequently.
  5. Add mangoes.
  6. Simmer 30 minutes more.
  7. Can or store in refrigerator.
  8. Delicious on chicken and rice or turkey and dressing.
