Ingredients

  • 2 c. mango puree
  • 1/4 c. sifted flour
  • 3/4 c. sugar
  • 1/2 tsp. cinnamon
  • 1 tbsp. lime juice
  • 1/4 c. evaporated milk
  • 2 eggs
  • pastry for 1 (9-inch) pie

Instructions

  1. Prepare the custard by mixing together the mango puree, sifted flour, sugar, cinnamon, lime juice, evaporated milk, and beaten eggs.
  2. Line a 9-inch pie plate with pastry and bake at 400°F for 5 minutes.
  3. Remove from oven and fill with the prepared custard mixture.
  4. Reduce oven temperature to 350°F and bake for 30 minutes or until set and golden.
