Ingredients

  • 2 c. flour
  • 1 tsp. soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. shortening
  • 2 eggs
  • 3/4 c. sugar
  • 1 c. diced mangoes
  • 1 Tbsp. lemon juice
  • 1/2 c. chopped nuts

Instructions

  1. Mix shortening, sugar, and eggs until well combined.
  2. Sift together flour, soda, baking powder, and salt in a separate bowl.
  3. Add the sifted dry ingredients to the creamed mixture alternately with diced mangoes mixed with lemon juice.
  4. Fold in chopped nuts last.
  5. Pour batter into a greased 9 x 5 x 3-inch loaf pan.
  6. Bake at 375°F (190°C) for 60 minutes or until a toothpick inserted into the center comes out clean.
