Ingredients

  • 1 small onion, minced
  • 2 Tbsp. fat or salad oil
  • 1 large potato, peeled and diced
  • 1 cup diced celery
  • 1 1/4 cups cooked or canned tomatoes
  • salt and pepper to taste
  • 1 1/2 cups whole kernel corn
  • 1 cup cooked and flaked codfish
  • hard roll, sliced

Instructions

  1. Heat oil in a skillet.
  2. Saute onion until tender.
  3. Add potato, celery, tomatoes, salt, and pepper, then simmer for 15 minutes.
  4. Add corn and cooked, flaked codfish to the soup.
  5. Heat until boiling.
  6. Slice the roll and toast the slices.
  7. Place a slice of toasted bread into each soup bowl.
  8. Ladle the chowder over the bread.
  9. Sprinkle with cheese before serving.
