Maple Balsamic Chicken
Ingredients
- 8 boneless skinless chicken thighs ⓘ
- 3/4 teaspoon salt ⓘ
- 3/4 teaspoon paprika ⓘ
- 3/4 teaspoon thyme ⓘ
- 1 tablespoon olive oil ⓘ
- 1 (14 1/2 ounce) can chicken broth ⓘ
- 1/3 cup maple syrup ⓘ
- 1/3 cup balsamic vinegar ⓘ
- 1/2 teaspoon fresh ground black pepper ⓘ
- 1/4 teaspoon cayenne pepper ⓘ
- 3 tablespoons chunky peanut butter ⓘ
Instructions
- Sprinkle chicken with salt, paprika, and thyme.
- Cook chicken in hot oil over medium-high heat 2 minutes per side or until golden brown.
- Stir in chicken broth and next 4 ingredients; bring to a boil.
- Cover, lower heat to low and simmer 15 minutes.
- Remove chicken to a platter; keep warm.
- Whisk peanut butter into liquid in skillet; boil over medium-high heat, uncovered, for 5 minutes or until sauce is thickened.
- Spoon sauce over chicken.
