Ingredients

  • 2 c. baby carrots
  • 1 Serrano chile, cored, seeded and minced
  • 1/2 tsp. salt
  • 1 c. water
  • 1 tsp. butter
  • 1 Tbsp. maple syrup
  • white pepper

Instructions

  1. Combine carrots, chile, salt, and water in a 2-quart pan and bring to a boil.
  2. Reduce heat to medium and cook until carrots are tender and only 1 tablespoon of water remains.
  3. Stir in butter, maple syrup, and pepper to taste.
