Ingredients

  • 1/2 cup shortening
  • 1 cup brown sugar
  • 2 eggs
  • 1 cup pumpkin or squash
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice
  • 1/2 teaspoon salt

Instructions

  1. Cream shortening; beat in sugar gradually.
  2. Stir in eggs and pumpkin.
  3. Stir in remaining ingredients.
  4. Pour into a well-greased 9 x 5 x 3-inch loaf pan.
  5. Bake in preheated 350° oven for 55 minutes to 1 hour.
  6. Test with tester before removing from oven.
  7. Cool before slicing.
