Maple Layer Cake

Ingredients

  • 1/2 c. butter or margarine
  • 1/2 c. sugar
  • 1 c. maple syrup
  • 2 eggs, beaten
  • 2 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. ginger
  • 1/4 tsp. salt
  • 1 c. hot water
  • 1/2 c. chopped walnuts
  • 1 tsp. vanilla extract

Instructions

  1. In a large bowl, cream the butter or margarine and sugar.
  2. Add the maple syrup; stir in the eggs.
  3. In a separate bowl, combine the flour, baking powder, baking soda, ginger and salt.
  4. Add to the syrup mixture.
  5. Stir in the hot water, nuts and vanilla; beat well.
  6. Pour into 2 greased 8 or 9-inch round cake pans.
  7. Bake in a preheated 350° oven for 30 to 35 minutes.
  8. Let cool in the pans for 10 minutes on wire racks.
  9. Remove from the pans.
  10. When cool, frost with Maple Frosting (recipe follows).
  11. Makes 1 double layer cake.
