Maple Upside-Down Cake

Instructions
- Melt butter in bottom of 8-inch round cake pan.
- Mix in maple sugar.
- Arrange pineapple chunks to cover bottom of pan.
- Mix beaten egg yolks with sugar; add milk and extract, then dry ingredients, sifted together.
- Fold in stiffly beaten egg whites. Pour batter over pineapple.
- Bake in moderate oven at 350° about 45 minutes.
- Invert and serve out in wedges, garnished with whipped cream.
- Makes 6 servings.
