Maple Upside-Down Cake

Ingredients

  • 3 Tbsp. butter or margarine
  • 1 c. maple sugar
  • 1 c. pineapple chunks
  • 3 eggs, separated
  • 1 c. sugar
  • 1/4 c. milk
  • 1 tsp. lemon extract
  • 1 c. sifted flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder

Instructions

  1. Melt butter in bottom of 8-inch round cake pan.
  2. Mix in maple sugar.
  3. Arrange pineapple chunks to cover bottom of pan.
  4. Mix beaten egg yolks with sugar; add milk and extract, then dry ingredients, sifted together.
  5. Fold in stiffly beaten egg whites. Pour batter over pineapple.
  6. Bake in moderate oven at 350° about 45 minutes.
  7. Invert and serve out in wedges, garnished with whipped cream.
  8. Makes 6 servings.
