Maple Walnut Squash Puree

Ingredients

  • 12 c. cubed, peeled squash
  • 3 Tbsp. butter
  • 3 Tbsp. maple syrup
  • 3/4 tsp. salt
  • 1/4 tsp. nutmeg and pepper

Instructions

  1. In a large pot of boiling salted water, cook squash for 25 minutes, or until tender; drain.
  2. Puree in blender, or by hand, until smooth.
  3. Blend in maple syrup, butter, salt, nutmeg and pepper.
  4. Spoon into shallow, greased 8-cup casserole or baking dish.
  5. Bake at 400°
  6. for 25 minutes.
  7. Serve immediately garnished with walnuts.
